Back open for sit-down drinking and dining, this Locomotive Street destination has attracted worldwide attention for its use of surplus produce and byproducts. With a new menu on offer, choose from a Pickled Mixed Surplus Market Veg or Leaf Salad with Poor Man’s Orange Dressing while sipping a ‘Yullis’, a drink using a beermaker’s spent grains or the ‘Saint Peter’, inspired by chef Josh Niland, which includes Murray Cod Fat in a salted caramel cocktail.
